Yamamoto started his culinary career at Kawasho in Tsukiji.
At the age of 31, he became executive chef of
the Nihonbashi branch of Shinjuku Steak Horitan.
He was then appointed executive chef at the Niki Club Hiroo.
In 2006, Yamamoto became executive chef of Abe,
the Tokyo branch of the Kameya ryokan in Yamagata.
The restaurant was awarded 1 Michelin star in 2008 and 2009, 2 years straight
He has been executive chef of IZAWA since 2011.
